2. Insulin and its salts. Insulin is a polypeptide containing 51 amino acid groups and produced in the islets of Langerhans of the pancreas in many animals. Human insulin can be extracted from the pancreas, by modifying bovine or porcine insulin, or by biotechnology methods - using bacteria or yeast to produce recombinant human insulin. Insulin enables cells to take up glucose and other nutrients and stores them as glycogen or fat. Pure insulin is a white hygroscopic-free powder of amorphous structure or shiny crystals soluble in water. In clinical practice, insulin is used for the treatment of diabetes mellitus.
