Pressed mass


Whipped mass: a confectionery mass of foamy structure based on sugar, syrup, and foaming agents, with or without the addition of other raw materials, food additives, flavorings, with a density of 450 - 1100 kg/cubic meter.

Notes

1. Whipped masses are divided by density into light-type whipped masses: "Soufflé", "Bird's Milk" and others (density 450 - 750 kg/cubic meter) and heavy-type whipped masses: "Nougat" (density 950 - 1100 kg/cubic meter).

2. Whipped masses are divided by composition into soufflé-type whipped masses, milk-whipped masses of the type "Bird's Milk", nut-whipped masses, fruit-whipped masses
