Cheese
Cheese - cheese is a milk product or a composite milk product produced from milk, milk products and (or) by-products of milk processing using special starters, technologies ensuring coagulation of milk proteins with the use of milk-coagulating enzymes or without their use, or by acid or thermacid method, followed by separation of curd from whey, its shaping, pressing, salting, ripening or without ripening with the addition of non-milk components not intended to replace milk components or without such additions1.
