Protein requirement
The need for protein is an evolutionarily established dominant in human nutrition, driven by the necessity to ensure an optimal physiological level of intake of essential amino acids. During periods of growth and development of the organism, as well as during intense reparative processes, the protein requirement per unit of body weight is higher than that of a healthy adult. Protein digestibility is an indicator characterizing the proportion of nitrogen absorbed by the body from the total amount consumed through food. Biological value is an indicator of protein quality, characterizing the degree of nitrogen retention and its efficiency of utilization for a growing organism or for maintaining nitrogen balance in adults.
