Protein digestibility


The need for protein is an evolutionarily established dominant in human nutrition, driven by the necessity to ensure optimal physiological intake levels of essential amino acids. During periods of growth and development, as well as during intense reparative processes, the protein requirement per unit of body weight is higher than that of a healthy adult. Protein digestibility is an indicator characterizing the proportion of nitrogen absorbed by the body from the total amount consumed through food. Biological value is an indicator of protein quality, reflecting the degree of nitrogen retention and its efficiency in utilization for a growing organism or for maintaining nitrogen balance in adults. The quality of protein is determined by the presence in it of a complete set of essential amino acids in a specific ratio both among themselves and with respect to non-essential amino acids. 1 gram of protein when oxidized in the body provides 4 kcal
