A cafeteria operating on raw materials and semi-finished products is a cafeteria in which there are conditions for processing certain types of raw materials (for example, unpeeled vegetables, boned meat in blocks), but it should mainly be supplied with semi-finished products of various degrees of readiness or ready-made items (fish - fillets, semi-finished products from fillets and shaped from mince; meat - natural large-cut semi-finished meat products, small-cut semi-finished meat products, and semi-finished minced culinary products; poultry - eviscerated carcasses or natural or minced semi-finished products; bakery and confectionery products - ready-made frozen semi-finished products or finished items; bread and pastry products - ready-made items, etc.)
