Dividing the dough
6.19. Dough division - dividing the dough into pieces, rounding the dough portions, preliminary proofing, shaping and final proofing of the dough portions, placing them on baking trays, scoring and finishing of the dough portions is carried out using specialized equipment. In the absence of dough dividers, dough formers, and scorers, manual division, scoring and finishing of the dough portions may be performed on tables with wooden, marble or metallic surfaces.
