Wine Stone, Wine Sediment


Wine lees are formed as a cloudy sediment during the fermentation and aging of wine. In cases where the sediment is processed on a filter press, wine lees are obtained in solid form. Dry wine lees may be in the form of powder, granules or irregularly shaped pieces.

Wine stone is a hard fused mass that forms in fermentation tanks during the fermentation of grape must or in barrels where wine is stored. It appears as powder, flakes or irregularly shaped crystalline pieces; its color varies from gray to dark red. Washed wine stone consists of crystals whose color varies from grayish yellow to reddish brown depending on the color of the wine from which it was obtained. Such washed wine stone is also included in this commodity code.

Wine lees and wine stone (including washed wine stone) are unrefined acidic potassium tartrates with a fairly high content of calcium tartrate. They are used as raw materials for the production of potassium bitartrate (acidic potassium tartarate), which appears in the form of white crystals or crystalline powder, is odorless, has an acidic taste, and is resistant to air exposure. Wine lees are used in the production of animal feed, while wine stone is used as a mordant in dyeing
