Black Pepper and White Pepper


Black and white pepper [114] consists of dried fruits of the tropical plant Piper nigrum (from the family of peppers). Depending on their purpose, black and white pepper are produced whole (as peppercorns) or ground. The color of whole black pepper is black with a brownish tint, while whole white pepper has a grayish-creamy hue in various shades. The color of ground black pepper is dark gray in various shades, and ground white pepper has a creamy hue with a grayish tint. The taste of black pepper is very hot/spicy, whereas white pepper has a moderately hot/spicy flavor.
