Ultra-pasteurization

Ultra-pasteurization is a process of thermal treatment of raw milk and its processed products. Ultra-pasteurization is carried out in a flow within a closed system with a holding time of not less than two seconds by one of the following methods: a) by contact of the product being treated with a heated surface at a temperature from 125 to 140 degrees Celsius; b) by direct mixing of sterile steam with the product being treated at a temperature from 135 to 140 degrees Celsius. Ultra-pasteurization followed by aseptic packaging ensures that the product meets industrial sterility requirements. The effectiveness of ultra-pasteurization is controlled by testing milk samples and its processed products in order to check their compliance with the requirements of this Federal Law. The frequency of control of the effectiveness of ultra-pasteurization is established by the production control program1.
